Tried something a little out of my comfort zone this week which was getting a Hungry Harvest box of fresh produce! 🤩📦
Usually, I buy pre-cut fruits and veggies because it’s easier with my busy schedule, but I thought it would be a nice change of pace to try Hungry Harvest’s delivery service. In my Mini Harvest box, I received spinach, cauliflower, tomatoes, red bell peppers, red potatoes, kiwi, grapefruit, and a booklet summarizing how to store each item! All the food tasted like it was store-bought, although it costs much less than it would at the grocery store. 🤩 I liked the concept of being surprised with foods that I don’t normally eat and the challenge of coming up with a meal to create with the ingredients. 💪 Most importantly, I love their mission to reduce food wastage and fight hunger! ♻️ The website has a Recipe Library link (https://hungryharvest.net/recipes) for tons of recipe ideas based on the ingredients you receive which is what I used to come up with my meal ideas.
Here’s some of the cool, delicious things I made with the items in my box:
🌮 Black Bean Tacos - red bell peppers, tomato, spinach 🌶🍅
Recipe:
Drain one can of black beans and add to large pot with some water
Cook until beans become soft and add taco seasoning to liking
Lightly cook tortillas with low heat on pan
Add beans to tortillas and any other toppings you desire (I added spinach, tomato, cilantro, chopped green onions, red peppers, green peppers, red onion, sour cream, and shredded cheese)!
🍹 Smoothie - kiwi, grapefruit, banana 🥝🍊🍌

Cut 1 grapefruit, 4 kiwi, and 1 banana and add to blender
Blend with apple juice and add ice until it reaches desired consistency
🍳 Egg Scramble - red potatoes, cauliflower, spinach 🥔🥦

Cut one head of cauliflower into florets
Place florets into pot, cover with water, and bring to a boil
Reduce heat to medium-low, cook for 7-10 minutes
Drain cauliflower and mash into small pieces with a fork
Put 1/4 cup water and some oil in a pan with the chopped red potatoes
Cover and bring to a boil with high heat, cook until the water evaporates and the potatoes begin to sauté and brown
Add the potatoes to the cauliflower and keep in a separate dish
Add oil to a pain and add desired amount of spinach
Once sautéed, add 2 eggs and scramble along with any seasoning you like
Once eggs are cooked to desired liking, add the mixture of potatoes and cauliflower and mix
Add mozzarella cheese and top with some chopped green onions
